Our trip to the lake was very relaxing. I spent a day with my Mom, Eric and I enjoyed caesars with fresh horseradish, and my cousins came out for s'mores, wine and fireworks.

Calgary Folk Fest
The Folk Festival starts tonight. We're heading out to the lake so unfortunately, we're going to miss it. If you get a chance to head down, be sure to check out Charles Bradley, Whitehorse, Dan Mangan, Justin Townes Earle, and The Rural Alberta Advantage. You can find the full schedule here.
One of my favorite things to do is to spend the evening on the River Cafe patio and listen to the bands. They'll even give you 10% off your bill when you show you Folk Fest ticket. Good music, good company, and good wine over a fish and game platter. I'm starting to re-think the trip to the lake!

Frittata!
What do you do when it's time to pick up more veggies and you haven't been home long enough to use the ones in your fridge? You make frittata of course!
The beauty of frittatas, aside from having a fun name, is that you can put anything you want in them. Here's what I used:
4 pieces bacon
1 garlic scape
1 red pepper
1 tbsp. feta
2 green onions
8 eggs
Set the oven to broil.
Chop all the ingredients (except the eggs, obviously) into small chunks. In a cast iron skillet, cook bacon until almost done. Drain half the renderings. Toss in the garlic scapes and red peppers. Saute until tender.
In a medium bowl, whisk the eggs, feta and green onion. Pour the eggs into the skillet and cook until the sides are set. Transfer the skillet into the over and broil until cooked through (about 4 minutes). Remove from the oven and let sit for 5 minutes to finish cooking. Cut into wedges and serve.

Cucumber Radish Salad
I feel like I should have come up with a more creative name, but I'm running on massage brain. Don't let the boring name deter you, it's delicious!
Cucumber Radish Salad
6 radishes, thinly sliced
1 long english cucumber, halved lengthwise and thinly sliced
1/2 C. cooked edamame beans
1/4 C. feta cheese
2 1/2 Tbsp. olive oil
juice of half a lemon
salt and pepper to taste
Throw the cucumbers, radishes and beans in a bowl. Squeeze lemon over the veggies and pour in the oil. Mix together and add salt and pepper to taste. Super complicated, I know ;)

Eagle Creek Farms CSA
Last Wednesday, (and not a moment too soon) I picked up our very first share of veggies from Eagle Creek Farms. We signed up for a half share that we pick up every week until mid-September.
The first one included potatoes, garlic scapes, a bag of mixed greens, radishes, a hot chile plant and a bunch of flowers.
This was my first experience with garlic scapes and I'm totally obsessed with them now. They have a mild garlic flavor and a texture that's similar to asparagus. I sauteed them in some bacon fat and added them to our egg sandwiches on Saturday. I've pretty much been using them as a garlic substitute ever since. I'll also have a yummy salad using the radishes for tomorrow's post.

Ahh the Weekend- Stampede Highlights
Well, another Stampede has come and gone. $8 beers were drank, corndogs were eaten and much fun was had. Here are my highlights:
Behind the Chutes Tour- our friends took us to the rodeo where we got to go behind the scenes and stand right behind the cowboys as they mounted their horses. It was amazing to feel the adrenaline and excitement.
The all-white night at the Wildhorse tent- After a delicious dinner at Double Zero, us girls made our way to Wildhorse for a night of drinks and dancing.
Garth Brooks- A night I won't soon forget. That man is an incredible entertainer. He played almost every song I wanted to hear, (except the Red Strokes) and at one point his wife, the ever talented Trisha Yearwood, came out for a couple of duets (including Walkaway Joe) and my favorite song of hers, She's in Love with the Boy. The two of them are truly country royalty.
Fireworks- last night we headed to Scotsman Hill to take in the final night of fireworks. For the past 10 days they've been going off at five locations in the city simultaneously.
Happy 100th Birthday Stampede. My liver is happy to see you go, but I'll be counting down the days until we meet again.

Bossypants
I'm a terrible book clubber. If I read the books at all, it's usually out of order. I'm mostly just there for the free food and wine (and good company, of course). We're actually not even talking about Bossypants until next year, but it seemed like the perfect summer read and I just couldn't help myself.

Sunday Supper at Model Milk
Model Milk is offering a fixed menu Sunday Supper and at $35 per person you get a tonne of food with some leftover cash for wine.
Eric, Mike and I stopped in this past Sunday and the meal was delicious. Although I missed my usual order of calamari, the pork pies quickly made up for it. The menu changes every Sunday, but if this visit and the other meals I've had there are any indication, you won't be disappointed. You should probably wear loose pants.

Ahh the Weekend...
Happy Belated Canada Day! I hope you had a good long weekend.
The majority of my weekend was spent being a part of my friend Melissa's wedding. Mel and I have been friends since grade 7 and it was so exciting to see her get married. Even more so, it was great to be able to spend so much time together. We're so lucky to have one of those friendships where even if you don't see each other for a long time, the minute you're together you pick up right where you left off.
Her photographer, Karyn from Prairie Sky Images, sent a sneak peek of some of her photos.
